Kedgeree is a traditional British dish, hearty and healthy, with haddock and rice. It was originally an adaptation of Indian Khichdi - a vegetarian dish - which is a combination of rice and lentil with butter and minimal spices. Our Kedgeree recipe is a really simple version, mild and tasty. There is no chilli in this Kedgeree/Khichdi spice mix. At the same time, adding a couple of green chillies or some chilli flakes will make it spicier for people who like heat.
Cook it with haddock or make it vegetarian by adding vegetable. Alternatively, use vegan butter and make it vegan. Khichdi is a go to comfort food in many parts of India and we are extremely delighted to adapt it to make a Kedgeree. It is our household favourite and we eat it with Sambar (using our Sambar Stew spice mix) and pappadom.
