Bombay Potato recipe

SHOPPING LIST

Baby potato - 1 kg

Onion - 300 gm chopped

Coriander leaves: a small bunch 

Lemon - a few drops 

Sunflower oil

Turmeric powder 

Salt


COOKING METHOD

Chop the potato to your desired size. If too small and deciding not to cut them, then please prick them with a knife. Boil the potato with some salt to your taste and half a tsp turmeric powder until half cooked.

 

Preheat the oven to 200 degree Celsius while the potato is cooking. Drain the water and transfer to a baking dish. Add the chopped onion, the whole pack of Bombay Potato Spice mix, a handful of chopped coriander leaves, 2 tbsp sunflower oil and mix it well. (If you like it hot and spicy, then add half a tsp red chilli powder to the mix.)Place it in the middle of the oven and cook for 20 minutes or until the potatoes are well cooked. Slight burning of the skin only adds to the taste. 


You can halve the pack and cook 500g potatoes. 


Add more salt if desired, a tablespoon full fresh coriander leaves and a few drops of lemon. Enjoy!!
